Fresh Corn Salad With Basil And Lemon

Ingredients

  • 6 ears of corn (about 3 cups)
  • 2 tablespoons chopped red onion
  • 1 teaspoon lemon juice
  • pinch of sugar
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh basil (or 1 tsp dried basil)
  • salt and pepper to taste

Method

  1. 1 Cook corn in boiling water or microwave until tender. Cut kernels from the cob.
  2. 2 In a small bowl, whisk together lemon juice, sugar, and olive oil.
  3. 3 Combine corn, red onion, and basil in a large bowl.
  4. 4 Pour dressing over corn mixture and toss to coat. Season with salt and pepper.
  5. 5 Refrigerate for at least 30 minutes before serving.
