Fresh Corn Salad With Basil And Lemon
Ingredients
- 6 ears of corn (about 3 cups)
- 2 tablespoons chopped red onion
- 1 teaspoon lemon juice
- pinch of sugar
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh basil (or 1 tsp dried basil)
- salt and pepper to taste
Method
- 1 Cook corn in boiling water or microwave until tender. Cut kernels from the cob.
- 2 In a small bowl, whisk together lemon juice, sugar, and olive oil.
- 3 Combine corn, red onion, and basil in a large bowl.
- 4 Pour dressing over corn mixture and toss to coat. Season with salt and pepper.
- 5 Refrigerate for at least 30 minutes before serving.
