French Vanilla Ice Cream

Ingredients

  • 1 quart milk
  • 1 vanilla bean, split
  • 6 egg yolks
  • 1 cup sugar
  • 6 egg whites
  • 1 cup heavy cream

Method

  1. 1 Heat milk and split vanilla bean in a double boiler.
  2. 2 Beat egg yolks and sugar until light, then fold in stiffly beaten egg whites.
  3. 3 Stir hot milk into egg mixture and cook in double boiler until it coats a knife.
  4. 4 Strain through a colander and let cool completely.
  5. 5 Stir in cream, freeze according to manufacturer's instructions, then ripen for 3 hours.
