French Vanilla Ice Cream
Ingredients
- 1 quart milk
- 1 vanilla bean, split
- 6 egg yolks
- 1 cup sugar
- 6 egg whites
- 1 cup heavy cream
Method
- 1 Heat milk and split vanilla bean in a double boiler.
- 2 Beat egg yolks and sugar until light, then fold in stiffly beaten egg whites.
- 3 Stir hot milk into egg mixture and cook in double boiler until it coats a knife.
- 4 Strain through a colander and let cool completely.
- 5 Stir in cream, freeze according to manufacturer's instructions, then ripen for 3 hours.
