French Style Creamed Peas

Ingredients

  • 1 pint shelled peas
  • 2 tablespoons water (from boiling peas)
  • 1 tablespoon flour
  • 1 ounce butter
  • Salt and pepper to taste
  • 1 egg yolk
  • 1.5 tablespoons cream

Method

  1. 1 Cook shelled peas until tender, then drain and reserve the cooking water.
  2. 2 Return peas to the pan with 2 tablespoons of the reserved water, flour, and butter. Simmer for 5 minutes.
  3. 3 Season with salt and pepper. Remove from heat and stir in the egg yolk mixed with cream.
  4. 4 Serve immediately while very hot.
