French Style Creamed Peas
Ingredients
- 1 pint shelled peas
- 2 tablespoons water (from boiling peas)
- 1 tablespoon flour
- 1 ounce butter
- Salt and pepper to taste
- 1 egg yolk
- 1.5 tablespoons cream
Method
- 1 Cook shelled peas until tender, then drain and reserve the cooking water.
- 2 Return peas to the pan with 2 tablespoons of the reserved water, flour, and butter. Simmer for 5 minutes.
- 3 Season with salt and pepper. Remove from heat and stir in the egg yolk mixed with cream.
- 4 Serve immediately while very hot.
