French Onion Soup With Poached Eggs

Ingredients

  • 2 quarts beef broth
  • 12 onions, quartered
  • 4 ounces butter
  • Salt and pepper to taste
  • 1 French loaf, sliced
  • Fresh butter for frying
  • Juice of 1 lemon
  • Poached eggs (optional)

Method

  1. 1 Soak quartered onions in water for one hour, then drain.
  2. 2 Melt 4 ounces butter in a pot. Add onions, salt, and pepper. Cover and stew until tender.
  3. 3 Slice the French loaf and fry slices in fresh butter until golden.
  4. 4 Add the beef broth to the stewed onions and simmer until heated through.
  5. 5 Stir in lemon juice. Serve soup over fried bread slices, topped with poached eggs if desired.
