French Onion Soup With Poached Eggs
Ingredients
- 2 quarts beef broth
- 12 onions, quartered
- 4 ounces butter
- Salt and pepper to taste
- 1 French loaf, sliced
- Fresh butter for frying
- Juice of 1 lemon
- Poached eggs (optional)
Method
- 1 Soak quartered onions in water for one hour, then drain.
- 2 Melt 4 ounces butter in a pot. Add onions, salt, and pepper. Cover and stew until tender.
- 3 Slice the French loaf and fry slices in fresh butter until golden.
- 4 Add the beef broth to the stewed onions and simmer until heated through.
- 5 Stir in lemon juice. Serve soup over fried bread slices, topped with poached eggs if desired.
