French Mustard Potato Salad
Ingredients
- 1 tsp cornstarch
- 4 tbsp milk
- 2 tbsp cream
- 6 tbsp olive oil
- 1 tsp French mustard
- 1 tsp salt
- 1/8 tsp pepper
- 4 potatoes
- chopped celery or lettuce leaves for garnish
Method
- 1 Moisten cornstarch in milk, add cream, and stir over hot water until thick.
- 2 Gradually stir in olive oil, mustard, salt, and pepper.
- 3 Boil potatoes, cut into blocks, and let cool slightly.
- 4 Mix potatoes with dressing and chill until very cold.
- 5 Serve garnished with chopped celery or lettuce leaves.
