French Dressing Potato Salad With Eggs

- onion juice
- finely chopped parsley
- French dressing
- lettuce leaves
- mayonnaise

- hard-boiled eggs
Method
- 1 Boil potatoes whole without peeling, then let them cool.
- 2 Remove skins and cut potatoes into slices, balls, or cubes.
- 3 Squeeze onion juice over potatoes, sprinkle with parsley, and toss with French dressing to moisten well.
- 4 Let the mixture stand in the dressing for several hours.
- 5 Serve by placing a spoonful of potato in lettuce nests, topping with mayonnaise, capers, and a quarter of a hard-boiled egg.
