French Bread Rolls
Ingredients
- 1 gallon fine flour
- 1 pint good new ale barm or yeast
- 6 egg whites, well beaten
- 3 spoonfuls fine salt
- Warm milk and fair water, as needed
Method
- 1 Place flour in a large bowl. Mix ale barm or yeast with beaten egg whites and stir into the center of the flour.
- 2 Add fine salt. Gradually add warm milk and water to form a pretty stiff dough.
- 3 Knead and work the dough thoroughly until smooth. Cover with a warm cloth and let rise until the oven is hot.
- 4 Shape into rolls or place in small wooden dishes. Bake in a quick oven until done.
- 5 Remove from oven and chip (break) while hot to serve.
