French Bread Rolls

Ingredients

  • 1 gallon fine flour
  • 1 pint good new ale barm or yeast
  • 6 egg whites, well beaten
  • 3 spoonfuls fine salt
  • Warm milk and fair water, as needed

Method

  1. 1 Place flour in a large bowl. Mix ale barm or yeast with beaten egg whites and stir into the center of the flour.
  2. 2 Add fine salt. Gradually add warm milk and water to form a pretty stiff dough.
  3. 3 Knead and work the dough thoroughly until smooth. Cover with a warm cloth and let rise until the oven is hot.
  4. 4 Shape into rolls or place in small wooden dishes. Bake in a quick oven until done.
  5. 5 Remove from oven and chip (break) while hot to serve.
