Fork-Roughened Twice-Baked Potatoes With Paprika

  • 4 large potatoes
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon chopped parsley
  • 1 teaspoon melted butter
  • milk
  • paprika

Method

  1. 1 Bake 4 large potatoes until tender. Cut in half lengthwise and scoop out the insides, keeping the skins intact.
  2. 2 Mash the potato flesh with ½ teaspoon salt, 1/8 teaspoon pepper, 1 teaspoon chopped parsley, and 1 teaspoon melted butter.
  3. 3 Return the mixture to the potato skins. Add a few drops of milk on top and rough up the surface with a fork.
