Fork-Roughened Twice-Baked Potatoes With Paprika
Ingredients
- 4 large potatoes
- ½ teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon chopped parsley
- 1 teaspoon melted butter
- milk
- paprika
Method
- 1 Bake 4 large potatoes until tender. Cut in half lengthwise and scoop out the insides, keeping the skins intact.
- 2 Mash the potato flesh with ½ teaspoon salt, 1/8 teaspoon pepper, 1 teaspoon chopped parsley, and 1 teaspoon melted butter.
- 3 Return the mixture to the potato skins. Add a few drops of milk on top and rough up the surface with a fork.
- 4 Sprinkle with paprika and bake in a moderate oven (350°F) until browned and heated through.
