Folded French Omelet
Ingredients
- 3 eggs, separated
- 1 tbsp milk
- Salt and pepper to taste
- 1/2 tsp butter
- Sugar (optional, for sweet version)
Method
- 1 Beat egg yolks and whites separately until very light. Season yolks with salt, pepper, and milk.
- 2 Gently fold the whipped whites into the seasoned yolks.
- 3 Melt butter in a hot pan, coating bottom and sides without browning. Pour in egg mixture and spread evenly.
- 4 Cook until a light crust forms on the bottom, then place in oven for 3 minutes until set but not hard.
- 5 Fold once and serve immediately on a hot dish. Add sugar instead of pepper for a sweet variation.
