  • 3 eggs, separated
  • 1 tbsp milk
  • Salt and pepper to taste
  • 1/2 tsp butter
  • Sugar (optional, for sweet version)

Method

  1. 1 Beat egg yolks and whites separately until very light. Season yolks with salt, pepper, and milk.
  2. 2 Gently fold the whipped whites into the seasoned yolks.
  3. 3 Melt butter in a hot pan, coating bottom and sides without browning. Pour in egg mixture and spread evenly.
  4. 4 Cook until a light crust forms on the bottom, then place in oven for 3 minutes until set but not hard.
  5. 5 Fold once and serve immediately on a hot dish. Add sugar instead of pepper for a sweet variation.
