Fluffy Lemon Zest Butter Cake
Ingredients
- 250 g butter
- 250 g finest wheat flour
- 227 g sugar
- 4 eggs
- Zest of 1 lemon
- 1 heaping tsp baking powder
Method
- 1 In a cool place, beat butter and flour until very fluffy.
- 2 While stirring constantly, add sugar and eggs one at a time, alternating with sugar.
- 3 Fold in lemon zest and baking powder.
- 4 Quickly pour batter into a buttered pan and place immediately in the oven.
- 5 Bake for approximately 45 minutes.
