Fluffy Buttermilk Pancakes
Ingredients
- 3 cups milk
- 2 cups sifted flour
- 3 eggs
- 1 pinch salt
- 2 heaping teaspoons baking powder
Method
- 1 Beat egg yolks until light and creamy, then mix with the milk.
- 2 Place flour in a bowl and pour in part of the milk to make a thick batter.
- 3 Beat the thick batter vigorously until very smooth.
- 4 Dissolve baking powder in the remaining milk and add to the batter, beating thoroughly.
- 5 Fold in stiffly beaten egg whites last.
