Fluffy Buttermilk Pancakes

Ingredients

  • 3 cups milk
  • 2 cups sifted flour
  • 3 eggs
  • 1 pinch salt
  • 2 heaping teaspoons baking powder

Method

  1. 1 Beat egg yolks until light and creamy, then mix with the milk.
  2. 2 Place flour in a bowl and pour in part of the milk to make a thick batter.
  3. 3 Beat the thick batter vigorously until very smooth.
  4. 4 Dissolve baking powder in the remaining milk and add to the batter, beating thoroughly.
  5. 5 Fold in stiffly beaten egg whites last.
