Flour-Thickened Vanilla Pastry Cream

Ingredients

  • 2½ cups milk
  • 2 tablespoons flour
  • ¾ cup sugar
  • 1 egg
  • 1 teaspoon vanilla

Method

  1. 1 Scald the milk.
  2. 2 Turn the hot milk onto the beaten egg.
  3. 3 Return the mixture to the heat.
  4. 4 Add flour moistened with a little milk, along with the sugar.
  5. 5 Stir constantly until the mixture thickens.
  6. 6 Let it cool before adding vanilla and using as cake filling.
