Flour-Thickened Vanilla Pastry Cream
Ingredients
- 2½ cups milk
- 2 tablespoons flour
- ¾ cup sugar
- 1 egg
- 1 teaspoon vanilla
Method
- 1 Scald the milk.
- 2 Turn the hot milk onto the beaten egg.
- 3 Return the mixture to the heat.
- 4 Add flour moistened with a little milk, along with the sugar.
- 5 Stir constantly until the mixture thickens.
- 6 Let it cool before adding vanilla and using as cake filling.
