Flour Crusted Roast Beef
Ingredients
- Beef roast (rib or rolled), well-streaked with fat
- Flour, for dredging
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp drippings
Method
- 1 Preheat oven to very hot (approx 425°F). Place beef on a rack in a pan.
- 2 Dredge the entire roast with flour. Add salt, pepper, and drippings to the pan, ensuring they do not touch the meat.
- 3 Roast in the hot oven for 15-20 minutes until browned.
- 4 Lower oven temperature to moderate (350°F). Cook slowly until desired doneness, basting frequently.
- 5 Do not add water to the pan. Remove roast and let rest before slicing.
