Flour And Cornstarch Lemon Pie
Ingredients
- 1 cup water
- 3 tablespoons cornstarch
- 2 tablespoons flour
- 1 cup sugar
- 3 eggs
- 4 tablespoons lemon juice
- 1 teaspoon grated lemon rind
- 1 teaspoon salt
- pie crust (for 1 pie plate)
Method
- 1 Line a pie plate with pastry and bake for 10 minutes until very light brown.
- 2 Bring 1 cup water to a boil. Mix cornstarch, flour, and ½ cup sugar with ½ cup cold water until smooth.
- 3 Separate eggs. Add yolks to the cornstarch mixture, then slowly pour into the boiling water. Cook 5 minutes, stirring constantly.
- 4 Stir in lemon juice, rind, and salt. Pour filling into the baked crust.
- 5 Beat egg whites until foamy, then add remaining 3 tablespoons sugar. Spread thickly over the pie.
- 6 Dust with sugar and brown slightly in a slow oven (300°F).
