Ingredients

  • 1 cup water
  • 3 tablespoons cornstarch
  • 2 tablespoons flour
  • 1 cup sugar
  • 3 eggs
  • 4 tablespoons lemon juice
  • 1 teaspoon grated lemon rind
  • 1 teaspoon salt
  • pie crust (for 1 pie plate)

Method

  1. 1 Line a pie plate with pastry and bake for 10 minutes until very light brown.
  2. 2 Bring 1 cup water to a boil. Mix cornstarch, flour, and ½ cup sugar with ½ cup cold water until smooth.
  3. 3 Separate eggs. Add yolks to the cornstarch mixture, then slowly pour into the boiling water. Cook 5 minutes, stirring constantly.
  4. 4 Stir in lemon juice, rind, and salt. Pour filling into the baked crust.
  5. 5 Beat egg whites until foamy, then add remaining 3 tablespoons sugar. Spread thickly over the pie.
  6. 6 Dust with sugar and brown slightly in a slow oven (300°F).
