Floating Island Custard
Ingredients
- 1 quart milk
- 4 eggs
- 4 tablespoons sugar
- ¼ teaspoon salt
- ½ cup currant jelly
- 2 teaspoons vanilla or almond extract
Method
- 1 Scald milk.
- 2 Beat egg yolks, stir in sugar and salt.
- 3 Gradually add hot milk to yolk mixture, stirring well.
- 4 Cook slowly until mixture thickens, stirring continually.
- 5 Cool, flavor with vanilla or almond extract, and pour into a serving dish.
- 6 Beat egg whites until dry, then beat in currant jelly one teaspoon at a time.
- 7 Drop meringue spoonfuls on top of custard, placing small pieces of jelly in the center of each.
- 8 Chill and serve.
