Floating Island Custard

Ingredients

  • 1 quart milk
  • 4 eggs
  • 4 tablespoons sugar
  • ¼ teaspoon salt
  • ½ cup currant jelly
  • 2 teaspoons vanilla or almond extract

Method

  1. 1 Scald milk.
  2. 2 Beat egg yolks, stir in sugar and salt.
  3. 3 Gradually add hot milk to yolk mixture, stirring well.
  4. 4 Cook slowly until mixture thickens, stirring continually.
  5. 5 Cool, flavor with vanilla or almond extract, and pour into a serving dish.
  6. 6 Beat egg whites until dry, then beat in currant jelly one teaspoon at a time.
  7. 7 Drop meringue spoonfuls on top of custard, placing small pieces of jelly in the center of each.
  8. 8 Chill and serve.
