Flambéed Rum Omelette

Ingredients

  • 5 eggs
  • Castor sugar
  • 2 tbsp rum
  • Butter
  • Sugar for dusting

Method

  1. 1 Break 5 eggs into a bowl, add castor sugar and 2 tbsp rum. Beat vigorously until frothy.
  2. 2 Melt butter in a shallow pan. Pour in the egg mixture and cook over heat for 3 minutes.
  3. 3 Slide the omelette onto a hot dish and dust with sugar.
  4. 4 Just before serving, ignite 1 tbsp rum in a spoon and pour it over the omelette.
