Flambéed Rum Omelette
Ingredients
- 5 eggs
- Castor sugar
- 2 tbsp rum
- Butter
- Sugar for dusting
Method
- 1 Break 5 eggs into a bowl, add castor sugar and 2 tbsp rum. Beat vigorously until frothy.
- 2 Melt butter in a shallow pan. Pour in the egg mixture and cook over heat for 3 minutes.
- 3 Slide the omelette onto a hot dish and dust with sugar.
- 4 Just before serving, ignite 1 tbsp rum in a spoon and pour it over the omelette.
