Flambéed Rum Omelet

Ingredients

  • 2 eggs
  • 1 pinch sugar
  • 1 tbsp rum or brandy

Method

  1. 1 Prepare a French or beaten omelet using eggs and a pinch of sugar. Omit any pepper.
  2. 2 Place the omelet dish on a larger, heat-resistant dish to protect the table from heat.
  3. 3 Pour a few spoonfuls of rum or brandy over the cooked omelet just before serving.
  4. 4 Light the alcohol on fire at the table and serve immediately.
