Flaky Pie Crust

Ingredients

  • 3 cups flour
  • 1 tsp salt
  • 3 tsp baking powder
  • 2/3 cup shortening
  • 1/2 cup ice-cold water

Method

  1. 1 Sift flour, salt, and baking powder together twice.
  2. 2 Cut in shortening using a turner or spatula until coarse.
  3. 3 Mix in ice-cold water, chopping and turning until a dough ball forms; do not knead.
  4. 4 Divide dough into four parts. Roll out on a floured board, folding and re-rolling if torn.
  5. 5 Place on tin, trim edges, and add top crust with steam gashes.
  6. 6 Brush with egg wash (1 yolk, 1/2 cup milk, 2 tsp sugar) and bake at 350°F.
