Flaky Pie Crust
Ingredients
- 3 cups flour
- 1 tsp salt
- 3 tsp baking powder
- 2/3 cup shortening
- 1/2 cup ice-cold water
Method
- 1 Sift flour, salt, and baking powder together twice.
- 2 Cut in shortening using a turner or spatula until coarse.
- 3 Mix in ice-cold water, chopping and turning until a dough ball forms; do not knead.
- 4 Divide dough into four parts. Roll out on a floured board, folding and re-rolling if torn.
- 5 Place on tin, trim edges, and add top crust with steam gashes.
- 6 Brush with egg wash (1 yolk, 1/2 cup milk, 2 tsp sugar) and bake at 350°F.
