Flaky Butter Pastry
Ingredients
- 1 lb flour
- ½ lb butter or dripping
- A pinch of salt
- Enough cold water to mix
Method
- 1 Rub half the butter into the flour and salt, as for short crust.
- 2 Mix with cold water to form a paste, then roll out very thinly.
- 3 Place the remaining butter in small pieces over the rolled paste.
- 4 Fold the pastry in three, then fold in three again.
- 5 Roll out to the size required for your recipe.
