Flaky Butter Pastry

Ingredients

  • 1 lb flour
  • ½ lb butter or dripping
  • A pinch of salt
  • Enough cold water to mix

Method

  1. 1 Rub half the butter into the flour and salt, as for short crust.
  2. 2 Mix with cold water to form a paste, then roll out very thinly.
  3. 3 Place the remaining butter in small pieces over the rolled paste.
  4. 4 Fold the pastry in three, then fold in three again.
  5. 5 Roll out to the size required for your recipe.
