Fish And Vegetable Chowder
Ingredients
- 3 lbs fish
- 2 cups diced potatoes
- 1/3 cup chopped onion
- 1/4 cup chopped salt pork
- 1 teaspoon salt
- 1/8 teaspoon cayenne
- 1 cup peas
- 2 cups cold water
- 2 tablespoons fat
- 2 tablespoons flour
- 1 cup diced carrots
- 1 pint scalded milk
Method
- 1 Cut fish into small pieces. Cover bones, fins, and head with cold water and simmer for 15 minutes, then strain.
- 2 Cook onion and salt pork until brown.
- 3 In a kettle, place layers of fish and mixed vegetables.
- 4 Add seasonings to the strained fish water and mix with the fat and flour.
- 5 Pour the liquid mixture over the fish and vegetables, add scalded milk, and cook slowly for 40 minutes covered.
