Fish And Vegetable Chowder

Ingredients

  • 3 lbs fish
  • 2 cups diced potatoes
  • 1/3 cup chopped onion
  • 1/4 cup chopped salt pork
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne
  • 1 cup peas
  • 2 cups cold water
  • 2 tablespoons fat
  • 2 tablespoons flour
  • 1 cup diced carrots
  • 1 pint scalded milk

Method

  1. 1 Cut fish into small pieces. Cover bones, fins, and head with cold water and simmer for 15 minutes, then strain.
  2. 2 Cook onion and salt pork until brown.
  3. 3 In a kettle, place layers of fish and mixed vegetables.
  4. 4 Add seasonings to the strained fish water and mix with the fat and flour.
  5. 5 Pour the liquid mixture over the fish and vegetables, add scalded milk, and cook slowly for 40 minutes covered.
