Fillets Poached Salmon In Spring Water
Ingredients
- Salmon fillet or steak
- Spring water (enough to cover fish)
- Salt
Method
- 1 Place a fish kettle on the stove and fill with enough spring water to completely cover the salmon.
- 2 Bring the water to a boil and add a handful of salt, skimming off any scum that rises.
- 3 Add the well-washed salmon to the boiling water.
- 4 Reduce heat to maintain a gentle boil, cooking for approximately 15 minutes per pound depending on thickness.
