Figs And Whipped Cream On Toast

Ingredients

  • 1/2 lb pulled figs
  • 1/4 cup sugar
  • grated rind and juice of 1/2 lemon
  • 1 thick slice bread
  • 2 tbsp butter
  • 2/3 cup heavy cream
  • 1/4 cup sugar

Method

  1. 1 Cook figs in boiling water until tender. Add 1/4 cup sugar and lemon rind/juice; cook until syrup reduces.
  2. 2 Remove crust from bread slice. Sauté in butter until golden brown on both sides. Drain on paper.
  3. 3 Beat cream with 1/4 cup sugar until stiff. Heap figs on bread, top with cream, and serve immediately.
