Figs And Whipped Cream On Toast
Ingredients
- 1/2 lb pulled figs
- 1/4 cup sugar
- grated rind and juice of 1/2 lemon
- 1 thick slice bread
- 2 tbsp butter
- 2/3 cup heavy cream
- 1/4 cup sugar
Method
- 1 Cook figs in boiling water until tender. Add 1/4 cup sugar and lemon rind/juice; cook until syrup reduces.
- 2 Remove crust from bread slice. Sauté in butter until golden brown on both sides. Drain on paper.
- 3 Beat cream with 1/4 cup sugar until stiff. Heap figs on bread, top with cream, and serve immediately.
