Fig Walnut Oat Bars
Ingredients
- 1 cup figs
- 1 cup walnuts
- 1 cup sugar
- 1/4 cup orange juice
- 1/4 cup hot water
- 1/2 cup margarine or butter
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 cup oats
Method
- 1 Preheat oven to 350°F. Lightly grease a 9x13 inch baking pan.
- 2 Combine figs, walnuts, sugar, orange juice, and hot water in a mixing bowl and set aside.
- 3 Mix butter and brown sugar until creamy. Add egg and mix until smooth.
- 4 Stir flour and baking soda into the egg mixture. Blend in oats to make soft dough.
- 5 Reserve 1 cup of dough. Press remaining dough into the pan bottom. Spread fig mixture over dough.
- 6 Crumble reserved dough over top. Bake 30 minutes until golden brown. Cool and cut into 24 bars.
