Fig Ice Cream
Ingredients
- 3½ cups milk
- 2 tablespoons cornstarch
- ½ cup cold milk
- 3 eggs
- 1½ cups sugar
- 1 tablespoon gelatin
- 4 tablespoons cold water
- 1 pint heavy cream
- 1 tablespoon vanilla extract
- 2 cups chopped figs
Method
- 1 Heat 3½ cups milk in a double boiler until boiling. Stir in cornstarch mixed with ½ cup cold milk. Cook for 10 minutes.
- 2 Beat eggs and 1½ cups sugar. Slowly pour the hot milk mixture into the eggs, stirring constantly.
- 3 Return mixture to heat. Add gelatin dissolved in 4 tablespoons cold water. Cook for 3 minutes, then cool completely.
- 4 Stir in 1 pint cream and 1 tablespoon vanilla. Begin freezing in an ice cream maker.
- 5 After 10 minutes of freezing, add 2 cups chopped figs. Continue freezing until hard.
