Fig Fudge

Ingredients

  • 1/4 lb chopped figs
  • 1 lb brown sugar
  • 1 cup water
  • 1 tablespoon Crisco
  • 1 teaspoon lemon extract
  • 1/8 teaspoon salt
  • Pinch cream of tartar

Method

  1. 1 Wash, dry, and chop the figs.
  2. 2 Combine sugar and water in a saucepan and dissolve.
  3. 3 Add Crisco and cream of tartar, then bring to a boil.
  4. 4 Add figs and boil to a soft ball stage (240°F), stirring constantly.
  5. 5 Remove from heat, add lemon extract and salt, and cool for five minutes.
  6. 6 Stir until the mixture begins to grain, then pour into a greased tin.
  7. 7 When half cold, mark into squares.
