Fig And Raisin Spice Cake
Ingredients
- ½ cup butter
- 2 cups flour
- ½ tsp salt
- 1 cup figs
- 1½ cups sugar
- 2 tsp baking powder
- ½ cup water
- 1 cup raisins
- 3 eggs
- Cinnamon, mace, cloves
- 1 tbsp honey
- ½ cup almonds
Method
- 1 Blend butter, sugar, spices, and salt. Beat egg yolks and add to mixture.
- 2 Sift in baking powder and flour, then add water and honey.
- 3 Chop fruit and nuts, toss with flour, and fold into batter along with stiffly beaten egg whites.
- 4 Bake for 1 hour in a 375°F oven.
