Fig And Currant Layer Cake With Almond Frosting

Ingredients

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 cups flour
  • 2 tsp baking powder
  • 4 egg whites
  • 1 cup sugar
  • 3/4 cup chopped figs
  • 1/4 cup currants
  • 2 egg whites
  • 1 1/2 cups powdered sugar
  • Almond extract

Method

  1. 1 Preheat oven to 350°F. Grease three 6-inch layer cake pans.
  2. 2 Beat 1/2 cup butter and 1 cup sugar until creamy.
  3. 3 Mix milk and 1 cup flour; stir into butter mixture.
  4. 4 Sift remaining 1 cup flour and 2 tsp baking powder. Beat 4 egg whites to stiff peaks.
  5. 5 Alternately add flour mixture and beaten egg whites to batter. Divide evenly among pans.
  6. 6 Bake for 7-10 minutes until done. Cool completely.
  7. 7 Boil 1 cup sugar with a little water until clear. Stir in 3/4 cup chopped figs and 1/4 cup currants.
  8. 8 Spread fig mixture between layers. Beat 2 egg whites to a froth.
  9. 9 Stir in 1 1/2 cups powdered sugar and almond extract. Ice top and sides.
