Fig And Currant Layer Cake With Almond Frosting
Ingredients
- 1/2 cup butter
- 1 cup granulated sugar
- 1/2 cup milk
- 2 cups flour
- 2 tsp baking powder
- 4 egg whites
- 1 cup sugar
- 3/4 cup chopped figs
- 1/4 cup currants
- 2 egg whites
- 1 1/2 cups powdered sugar
- Almond extract
Method
- 1 Preheat oven to 350°F. Grease three 6-inch layer cake pans.
- 2 Beat 1/2 cup butter and 1 cup sugar until creamy.
- 3 Mix milk and 1 cup flour; stir into butter mixture.
- 4 Sift remaining 1 cup flour and 2 tsp baking powder. Beat 4 egg whites to stiff peaks.
- 5 Alternately add flour mixture and beaten egg whites to batter. Divide evenly among pans.
- 6 Bake for 7-10 minutes until done. Cool completely.
- 7 Boil 1 cup sugar with a little water until clear. Stir in 3/4 cup chopped figs and 1/4 cup currants.
- 8 Spread fig mixture between layers. Beat 2 egg whites to a froth.
- 9 Stir in 1 1/2 cups powdered sugar and almond extract. Ice top and sides.
