Fig And Almond Paste Sandwiches
Ingredients
- 1/4 lb figs, chopped fine
- 1/4 cup water
- 1/3 cup almonds, blanched, chopped fine, and pounded to a paste
- 1 tsp rose water
- Juice of 1/2 lemon
- Ladyfingers or cakelets, for serving
Method
- 1 Chop the figs very fine and place in a saucepan with water. Cook over medium heat, stirring frequently, until the mixture forms a smooth paste.
- 2 Remove from heat and stir in the almond paste, rose water, and lemon juice. Allow the filling to cool completely.
- 3 Spread the cooled fig mixture onto one ladyfinger or cakelet. Press another on top to form a sandwich.
- 4 Arrange the sandwiches on a serving plate and serve immediately.
