Fennel Biskets

Ingredients

  • 1 lb granulated sugar
  • 1 lb all-purpose flour
  • 6 large eggs
  • 2 egg yolks
  • 1 oz fennel seeds, finely ground
  • Butter for greasing

Method

  1. 1 Preheat oven to 425°F. Butter small ring-shaped molds (bisket tins) very thinly.
  2. 2 Combine sugar, flour, eggs, and extra yolks in a bowl. Beat vigorously for one full hour until light and airy.
  3. 3 Sprinkle ground fennel seeds into the bottom of each prepared mold.
  4. 4 Fill molds with batter and bake at 425°F until golden brown and set.
