English Muffin Broccoli Pizza
Ingredients
- 4 English muffins, halved
- 1 cup cooked chopped broccoli
- 1 cup pizza sauce or spaghetti sauce
- 1/2 cup part-skim shredded mozzarella cheese
- 3 tablespoons shredded carrot
- 1 teaspoon grated Parmesan cheese
Method
- 1 Cook chopped broccoli in water until tender, then drain and let cool.
- 2 Cut English muffins in half and toast the 8 halves.
- 3 Shred mozzarella and carrots to yield 1/2 cup cheese and 3 tablespoons carrots.
- 4 Spoon 2 tablespoons pizza sauce onto each muffin half.
- 5 Top each half with 1 tablespoon mozzarella, 2 tablespoons broccoli, and 1 teaspoon carrots.
- 6 Sprinkle with 1 teaspoon Parmesan and toast in toaster oven for 2 minutes until cheese melts.
