English Bath Buns With Currants

Ingredients

  • 1 cake compressed yeast
  • 1 cup milk
  • 2 cups flour
  • 2/3 cup melted butter
  • 4 eggs, well beaten
  • currants
  • candied peel
  • sugar for sprinkling

Method

  1. 1 Dissolve yeast in warm milk. Add 2 cups flour to make a sponge. Let rise until light.
  2. 2 Stir in melted butter and beaten eggs. Knead well and let rise again for about 1 hour.
  3. 3 Shape dough into small apple-sized balls. Press currants and candied peel into each.
  4. 4 Let rise 10-15 minutes in a warm place. Sprinkle with sugar and bake until golden.
