Eggs Benedict With Minced Meat Hash
Ingredients
- 1 tablespoon butter
- 1 slice onion
- 1 tablespoon flour
- 1 cup stock or hot water
- 1 ½ cups minced meat (beef, mutton, veal, or chicken)
- Salt and pepper to taste
- 1 cup milk (for white hash)
- Toast, cut into circles
- Poached eggs
- Parsley for garnish
Method
- 1 Melt butter in a pan with onion slice; remove onion when cooked.
- 2 Add flour to pan and brown for beef/mutton hash, or keep white for veal/chicken.
- 3 Slowly stir in stock (or milk for white hash) until smooth.
- 4 Add minced meat, salt, and pepper; stir until incorporated and heated through.
- 5 Serve hash on toast circles, topped with a poached egg and parsley.
