Eggs Benedict With Minced Meat Hash

Ingredients

  • 1 tablespoon butter
  • 1 slice onion
  • 1 tablespoon flour
  • 1 cup stock or hot water
  • 1 ½ cups minced meat (beef, mutton, veal, or chicken)
  • Salt and pepper to taste
  • 1 cup milk (for white hash)
  • Toast, cut into circles
  • Poached eggs
  • Parsley for garnish

Method

  1. 1 Melt butter in a pan with onion slice; remove onion when cooked.
  2. 2 Add flour to pan and brown for beef/mutton hash, or keep white for veal/chicken.
  3. 3 Slowly stir in stock (or milk for white hash) until smooth.
  4. 4 Add minced meat, salt, and pepper; stir until incorporated and heated through.
  5. 5 Serve hash on toast circles, topped with a poached egg and parsley.
