Eggs And Tomatoes On Toast
Ingredients
- 3 tbsp Crisco
- 4 medium tomatoes
- 8 rounds buttered toast
- 3 eggs
- 2 tbsp cream
- 1 tbsp chopped pimiento
- Salt and pepper to taste
- Parsley for garnish
Method
- 1 Halve tomatoes crosswise, remove cores and seeds. Fry halves in 2 tbsp Crisco until lightly browned.
- 2 Beat eggs with cream, remaining 1 tbsp Crisco, pimiento, salt, and pepper. Stir over heat until creamy and just setting.
- 3 Place each tomato half on a round of buttered toast. Divide egg mixture into tomatoes, garnish with parsley, and serve hot.
