Eggs And Tomatoes On Toast

Ingredients

  • 3 tbsp Crisco
  • 4 medium tomatoes
  • 8 rounds buttered toast
  • 3 eggs
  • 2 tbsp cream
  • 1 tbsp chopped pimiento
  • Salt and pepper to taste
  • Parsley for garnish

Method

  1. 1 Halve tomatoes crosswise, remove cores and seeds. Fry halves in 2 tbsp Crisco until lightly browned.
  2. 2 Beat eggs with cream, remaining 1 tbsp Crisco, pimiento, salt, and pepper. Stir over heat until creamy and just setting.
  3. 3 Place each tomato half on a round of buttered toast. Divide egg mixture into tomatoes, garnish with parsley, and serve hot.
