Egg Yolk Enriched Celery Sauce
Ingredients
- 2 roots celery, stalks separated
- 3 cups water
- 1 teaspoon salt
- 2 cups chicken stock or water with 1 chicken bouillon cube
- 3 tablespoons butter
- 3 tablespoons flour
- ¾ teaspoon salt
- 1/8 teaspoon pepper
- 1 egg yolk
- 2/3 cup cream
Method
- 1 Wash celery, cut into small pieces, and measure 1 1/3 cups.
- 2 Boil celery in 3 cups water and 1 teaspoon salt for 20 minutes until tender. Drain, reserving liquid and celery.
- 3 Adjust reserved liquid with stock or bouillon water to make 2 cups total.
- 4 Melt butter, whisk in flour, salt, and pepper. Stir in the 2 cups liquid and boil for 1 minute.
- 5 Add cooked celery and bring to a boil.
- 6 Whisk egg yolk and cream, then stir into sauce. Cook over hot water for 2 minutes, stirring constantly.
