Egg Yolk Enriched Celery Sauce

Ingredients

  • 2 roots celery, stalks separated
  • 3 cups water
  • 1 teaspoon salt
  • 2 cups chicken stock or water with 1 chicken bouillon cube
  • 3 tablespoons butter
  • 3 tablespoons flour
  • ¾ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg yolk
  • 2/3 cup cream

Method

  1. 1 Wash celery, cut into small pieces, and measure 1 1/3 cups.
  2. 2 Boil celery in 3 cups water and 1 teaspoon salt for 20 minutes until tender. Drain, reserving liquid and celery.
  3. 3 Adjust reserved liquid with stock or bouillon water to make 2 cups total.
  4. 4 Melt butter, whisk in flour, salt, and pepper. Stir in the 2 cups liquid and boil for 1 minute.
  5. 5 Add cooked celery and bring to a boil.
  6. 6 Whisk egg yolk and cream, then stir into sauce. Cook over hot water for 2 minutes, stirring constantly.
