  • 2 tbsp butter
  • 2 tbsp flour
  • ¼ tsp salt
  • dash of pepper
  • ½ cup chicken stock
  • ½ cup cream
  • 1 egg yolk, beaten

Method

  1. 1 Melt butter in a saucepan over medium heat.
  2. 2 Stir in flour, salt, and pepper to form a roux.
  3. 3 Whisk in chicken stock and cream until smooth.
  4. 4 Add beaten egg yolk and cook over hot water for 5 minutes.
