Egg Yolk Bound Potato Croquettes

Ingredients

  • 1 lb boiled potatoes
  • 2 egg yolks
  • salt and pepper to taste
  • 1 egg yolk (for washing)
  • bread crumbs

Method

  1. 1 Mash the boiled potatoes in a mortar or bowl. Mix in the two egg yolks, salt, and pepper until well combined.
  2. 2 Shape the potato mixture into balls, approximately the size of a large egg.
  3. 3 Brush each ball lightly with the remaining egg yolk, then roll them in bread crumbs to coat evenly.
  4. 4 Fry the balls in hot oil or fat until they are a light golden brown. Serve immediately.
