Egg Yolk And White Cream Toast

Ingredients

  • bread slices
  • butter
  • hot water
  • 6 eggs
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup cream or milk
  • salt
  • pepper

Method

  1. 1 Cut bread into even pieces, toast them, and butter the slices. Moisten with hot water.
  2. 2 Boil eggs hard. Separate whites and yolks. Chop the whites finely and press the yolks through a sieve.
  3. 3 Melt 1 tbsp butter, stir in 1 tbsp flour, and add 1 cup cream or milk. Cook until thickened.
  4. 4 Stir chopped egg whites into the sauce with salt and pepper. Spread over the toast slices.
  5. 5 Sprinkle the mashed egg yolks evenly over the top. Serve very hot.
