  • 3 tablespoons granulated sugar
  • 2 tablespoons lemon juice
  • ½ cup ice-cold water
  • 1 egg white
  • 4 tablespoons crushed ice
  • Carbonated water

Method

  1. 1 In a small bowl, beat the egg yolk with sugar, lemon juice, and ice-cold water until well mixed.
  2. 2 Pour the mixture into a tall thin glass.
  3. 3 Carefully fold in the stiffly beaten egg white.
