Egg Wash Pastry Glaze
Ingredients
- 1 egg
- 1 tbsp water
- Sugar, for dusting
Method
- 1 Beat the egg with water just enough to break the yolk, avoiding froth. Using only the yolk is acceptable, but the white alone will not provide color.
- 2 Brush the mixture lightly over the pastry using a brush or quill feather, then dust with a very small amount of sugar.
- 3 Bake to achieve a brown, polished surface. For two layers, brush the bottom layer with plain water before stacking.
