Egg Wash Pastry Glaze

Ingredients

  • 1 egg
  • 1 tbsp water
  • Sugar, for dusting

Method

  1. 1 Beat the egg with water just enough to break the yolk, avoiding froth. Using only the yolk is acceptable, but the white alone will not provide color.
  2. 2 Brush the mixture lightly over the pastry using a brush or quill feather, then dust with a very small amount of sugar.
  3. 3 Bake to achieve a brown, polished surface. For two layers, brush the bottom layer with plain water before stacking.
