Egg-Rich Baking Powder Coffee Cake
Ingredients
- 4 cups flour
- 1 tsp salt
- 2 tsp baking powder
- 5 eggs, well beaten
- 2 tbsp sugar
- 2 cups milk
- 1 tbsp softened butter
- butter for dotting
- sugar and cinnamon for sprinkling
Method
- 1 Mix flour, salt, and baking powder in a bowl.
- 2 Beat eggs with 2 tbsp sugar, then add milk and 1 tbsp softened butter.
- 3 Combine wet and dry ingredients, mixing thoroughly.
- 4 Spread batter into a buttered baking pan.
- 5 Dot with butter, sprinkle with sugar and cinnamon.
- 6 Bake in a quick oven (425°F) and serve hot.
