Egg-Rich Baking Powder Coffee Cake

Ingredients

• 4 cups flour
• 1 tsp salt
• 2 tsp baking powder
• 5 eggs, well beaten
• 2 tbsp sugar
• 2 cups milk
• 1 tbsp softened butter
• butter for dotting
• sugar and cinnamon for sprinkling

Method

1. 1 Mix flour, salt, and baking powder in a bowl.
2. 2 Beat eggs with 2 tbsp sugar, then add milk and 1 tbsp softened butter.
3. 3 Combine wet and dry ingredients, mixing thoroughly.
4. 4 Spread batter into a buttered baking pan.
5. 5 Dot with butter, sprinkle with sugar and cinnamon.
6. 6 Bake in a quick oven (425°F) and serve hot.
