Egg Fried Rice With Meat And Vegetables
Ingredients
- 3 tablespoons vegetable oil
- 2 eggs, beaten
- 3 1/2 cups cooked brown rice (or white rice)
- 1 cup cooked chicken breast, ham, or pork, chopped
- 1 cup cooked mixed vegetables, chopped
- 2 green onions, sliced
- soy sauce or hot sauce, to taste
Method
- 1 Heat 1 teaspoon of oil in a pan. Add beaten eggs and scramble. Remove eggs and set aside.
- 2 Add remaining 2 teaspoons of oil to the pan. Stir-fry rice, breaking up lumps by pressing against the pan.
- 3 Add cooked meat and vegetables. Stir-fry until heated through.
- 4 Stir in green onions, reserved eggs, and soy sauce or hot sauce to taste. Serve hot.
