Egg Foam Biscuits With Nutmeg
Ingredients
- 8 eggs (separated)
- Weight of eggs in finely pounded loaf sugar
- Weight of eggs in dried flour
- Grated nutmeg, lemon peel, or pounded cinnamon (optional)
Method
- 1 Weigh the eggs, then measure out an equal weight of finely pounded loaf sugar and dried flour.
- 2 Beat the egg yolks and sugar together for 30 minutes until light and fluffy.
- 3 Gently fold in the beaten egg whites and the flour, along with your choice of nutmeg, lemon peel, or cinnamon.
- 4 Bake in a moderate oven (350°F) until set and lightly golden.
