Egg-Enriched Baked Tapioca Pudding
Ingredients
- 1 ½ cups pearl tapioca
- 1 quart rich milk
- 2 slightly heaping tablespoons butter
- ½ cup sugar
- 4 eggs, beaten
- Vanilla or grated lemon rind
- Butter for mould
- Dried bread crumbs for mould
Method
- 1 Soak tapioca in milk for two hours.
- 2 Cook in a double boiler until tapioca is clear.
- 3 Remove from heat; stir in butter and sugar.
- 4 Let cool slightly, then mix in beaten eggs and flavoring.
- 5 Butter a mould, sprinkle with bread crumbs, and add mixture.
- 6 Bake until set, turn out onto a platter, and serve hot.
