Egg-Enriched Baked Tapioca Pudding

Ingredients

  • 1 ½ cups pearl tapioca
  • 1 quart rich milk
  • 2 slightly heaping tablespoons butter
  • ½ cup sugar
  • 4 eggs, beaten
  • Vanilla or grated lemon rind
  • Butter for mould
  • Dried bread crumbs for mould

Method

  1. 1 Soak tapioca in milk for two hours.
  2. 2 Cook in a double boiler until tapioca is clear.
  3. 3 Remove from heat; stir in butter and sugar.
  4. 4 Let cool slightly, then mix in beaten eggs and flavoring.
  5. 5 Butter a mould, sprinkle with bread crumbs, and add mixture.
  6. 6 Bake until set, turn out onto a platter, and serve hot.
