Egg Bound Codfish And Potato Casserole
Ingredients
- 1 cup finely chopped codfish
- 2 cups mashed potatoes
- 1 egg
- 1 cup milk
- 1/2 cup butter
- Salt and pepper to taste
- Bread crumbs
- Additional milk for moistening
Method
- 1 Soak the codfish in cold water for several hours, then drain and finely chop it.
- 2 In a bowl, mix the chopped codfish, mashed potatoes, egg, 1 cup milk, butter, salt, and pepper until well combined.
- 3 Transfer the mixture to a baking dish and spread evenly.
- 4 Sprinkle bread crumbs over the top and drizzle with a little milk to moisten.
- 5 Bake in a moderate oven (350°F) for 30 minutes until heated through and golden.
