Duck With Pea Purée

Ingredients

  • 1 pint freshly shelled peas
  • Thin stock (for boiling peas)
  • 1 duck
  • Stock (for stewing duck)
  • Salt
  • 12 peppercorns
  • ½ clove garlic
  • 6 small onions
  • 1 bay leaf
  • 1 bouquet garni

Method

  1. 1 Boil the peas in a little thin stock until tender.
  2. 2 Rub the boiled peas through a sieve to create a smooth purée.
  3. 3 Stew the duck in stock with salt, peppercorns, garlic, onions, bay leaf, and bouquet garni until cooked through.
  4. 4 Pass the stewed duck and its liquid through a sieve.
  5. 5 Combine the sieved duck mixture with the pea purée.
  6. 6 Reduce the combined mixture over heat until it reaches the consistency of thick cream.
  7. 7 Serve the duck topped with the hot pea purée.
