Duck With Pea Purée
Ingredients
- 1 pint freshly shelled peas
- Thin stock (for boiling peas)
- 1 duck
- Stock (for stewing duck)
- Salt
- 12 peppercorns
- ½ clove garlic
- 6 small onions
- 1 bay leaf
- 1 bouquet garni
Method
- 1 Boil the peas in a little thin stock until tender.
- 2 Rub the boiled peas through a sieve to create a smooth purée.
- 3 Stew the duck in stock with salt, peppercorns, garlic, onions, bay leaf, and bouquet garni until cooked through.
- 4 Pass the stewed duck and its liquid through a sieve.
- 5 Combine the sieved duck mixture with the pea purée.
- 6 Reduce the combined mixture over heat until it reaches the consistency of thick cream.
- 7 Serve the duck topped with the hot pea purée.
