Ingredients

  • 1 duck
  • Juice of 1 lemon
  • Butter
  • 1 tablespoon flour
  • Stock to cover
  • 1 tablespoon ketchup
  • 1 carrot
  • 2 onions, chopped
  • 2 cloves
  • 1 bouquet garni
  • Salt and pepper
  • Mushrooms
  • Olives, soaked and scalded

Method

  1. 1 Rub duck with lemon juice and fry in butter for a few minutes.
  2. 2 Sprinkle with flour, add stock, ketchup, carrot, onions, cloves, bouquet garni, salt, and pepper.
  3. 3 Stew for 1 hour, then remove duck and strain gravy, removing all fat.
  4. 4 Add mushrooms and soaked olives to the gravy, boil for 10 minutes, and serve with duck.
