Duck With Mushrooms And Olives
Ingredients
- 1 duck
- Juice of 1 lemon
- Butter
- 1 tablespoon flour
- Stock to cover
- 1 tablespoon ketchup
- 1 carrot
- 2 onions, chopped
- 2 cloves
- 1 bouquet garni
- Salt and pepper
- Mushrooms
- Olives, soaked and scalded
Method
- 1 Rub duck with lemon juice and fry in butter for a few minutes.
- 2 Sprinkle with flour, add stock, ketchup, carrot, onions, cloves, bouquet garni, salt, and pepper.
- 3 Stew for 1 hour, then remove duck and strain gravy, removing all fat.
- 4 Add mushrooms and soaked olives to the gravy, boil for 10 minutes, and serve with duck.
