Dried Green Amber Plums
Ingredients
- Green amber plums
- Sugar
- Water
Method
- 1 Prick the plums in two or three places and soak them in cold water.
- 2 Gently scald the plums in water until tender, being careful not to boil them.
- 3 Place plums in a thin syrup (1 part sugar to 2 parts water) and warm them; cover and let sit overnight.
- 4 Repeat the warming process daily for several days, adding more sugar to the syrup as needed.
- 5 Boil the syrup until smooth, add plums, and boil briefly. Repeat this process for a few days.
- 6 Boil syrup until very strong, combine with plums, and let sit in a warm place for two days.
- 7 Drain the plums, dust them well with sugar, and lay them out to dry like other preserved fruits.
