Dressed Crab With Breadcrumbs And Olive Oil
Ingredients
- 1 good-sized crab
- 6 tbsp Crisco
- 3 tbsp breadcrumbs
- 3 tbsp olive oil
- 2 tbsp vinegar
- 1 tbsp chopped parsley
- Salt and pepper to taste
- Crisp lettuce leaves for serving
Method
- 1 Boil the crab in salted water for 30 minutes, then remove and let cool.
- 2 Crack the claws and remove the meat from the shell, discarding bones and fins.
- 3 Separate the firm white meat into shreds and mix the soft dark meat with breadcrumbs, olive oil, vinegar, salt, and pepper.
- 4 Season the white meat separately with a little salt and pepper.
- 5 Wash and dry the empty shell, then fill it with alternating stripes of the white and dark meat mixtures.
- 6 Decorate with chopped parsley and pipe Crisco around the edge using a piping bag.
- 7 Serve on crisp lettuce leaves, arranging small claws around the shell.
