Dressed Crab With Breadcrumbs And Olive Oil

Ingredients

  • 1 good-sized crab
  • 6 tbsp Crisco
  • 3 tbsp breadcrumbs
  • 3 tbsp olive oil
  • 2 tbsp vinegar
  • 1 tbsp chopped parsley
  • Salt and pepper to taste
  • Crisp lettuce leaves for serving

Method

  1. 1 Boil the crab in salted water for 30 minutes, then remove and let cool.
  2. 2 Crack the claws and remove the meat from the shell, discarding bones and fins.
  3. 3 Separate the firm white meat into shreds and mix the soft dark meat with breadcrumbs, olive oil, vinegar, salt, and pepper.
  4. 4 Season the white meat separately with a little salt and pepper.
  5. 5 Wash and dry the empty shell, then fill it with alternating stripes of the white and dark meat mixtures.
  6. 6 Decorate with chopped parsley and pipe Crisco around the edge using a piping bag.
  7. 7 Serve on crisp lettuce leaves, arranging small claws around the shell.
