Drawn Butter Sauce With Parsley
Ingredients
- 1/3 cup butter
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne
- 1 cup boiling water
- 2 tablespoons chopped parsley
Method
- 1 Melt the butter in a saucepan and whisk in the flour, salt, and cayenne to form a roux.
- 2 Gradually whisk in the boiling water and cook, stirring constantly, until the sauce thickens.
- 3 Stir in the chopped parsley and reserve 2 tablespoons of the fat to add just before serving.
