Double Fried Shoestring Potatoes
Ingredients
- potatoes, peeled and sliced into thin rounds
- oil or fat for deep frying
- coarse salt
Method
- 1 Peel potatoes and slice them into very thin rounds.
- 2 Dry the potato slices thoroughly with a cloth.
- 3 Heat oil in a deep fryer or pot until hot. Fry potato slices in batches until lightly colored.
- 4 Remove potatoes, let the oil heat up to a slightly higher temperature, then fry again until quite crisp.
- 5 Drain on paper towels and serve immediately with coarse salt sprinkled over.
