Double Fried Shoestring Potatoes

Ingredients

  • potatoes, peeled and sliced into thin rounds
  • oil or fat for deep frying
  • coarse salt

Method

  1. 1 Peel potatoes and slice them into very thin rounds.
  2. 2 Dry the potato slices thoroughly with a cloth.
  3. 3 Heat oil in a deep fryer or pot until hot. Fry potato slices in batches until lightly colored.
  4. 4 Remove potatoes, let the oil heat up to a slightly higher temperature, then fry again until quite crisp.
  5. 5 Drain on paper towels and serve immediately with coarse salt sprinkled over.
